Joe Kirkish was telling me about a series of healthy cooking and eating classes being held for MTU staff and families and sent along some photos of one of the events here today. Joe explains more about the classes for us here:

"Eric Karvonen, who is part of the food staff at MTU, agreed to head up a series of 6 weekly (now every other week for this 2nd series) demonstrations on healthy eating. Volunteers are members of the MTU staff or their spouses from across the campus.

Beginning with a tour of a supermarket, aisle to aisle, the volunteer group learned about better shopping procedures, then went into the spacious kitchen of the new dorm at Tech, Hillside Place. There, with the aid of other food staff assistants, Eric laid out the food for each session - in this case - for lessons in grilling - and after demonstrating peeling, slicing, etc., he turned the work over to volunteers. When they'd prepared everything, the cooking began - grilling on the patio outside. Eric would introduce comments on what knives, grill, etc., would give the best results as he went along. Finally, an hour and a half later (class from 4:30-6pm) the
group would enjoy the fruits of their work.

For this grilling session, the menu was a yogurt & cucumber sauce for Mid-eastern veggie burgers and fresh salmon prepared in two ways: on a cedar plank with Hoisin-mustard glaze and fennel-spiced salmon with gazpacho salad."

Salmon, Yummy stuff. Also good grilled with a bit of hickory chips mixed with the charcoal, slowly smoked on a low heat, and served with a bit of lemon, and some mango salsa on the side.
The class at Tech would be an enjoyable one to attend. I love to cook. Grilled oysters are another favorite.
