The Hyrkas family is no longer making that delicious juustoa (squeaky cheese). I really miss it. I have tried an alternate brand but it did not compare in taste and texture. Too rubbery.
Another thing disappearing from the Copper County.

The juustoa I had when I was a kid had no taste, and had the consistancy of those big gum rubber erasers in grade school. The true Finnlanders thought it was great. I was dumbfounded as to why.

My grandmother made juustoa that was VERY good. Not rubbery, had a good sweet cheesy taste, and was browned so nicely on top. (I hope I am thinking of the same thing...squeaky cheese?..... Maybe it was custard, but I know it wasn't viilia.

Try puting the squeeky cheese in the microwave for a while to slightly melt it...

It's great !

Juustoa has a very delicate texture, it is mild in taste. It is squeaky not rubbery. Some of you
must have eaten a poorly made cheese.
Hyrkas made the best. I bought it weekly for my
fellow Trivia players, many are not Finnish but
really liked the taste of it.
