It's another cold, rainy day here in mid-Michigan. It's a great day to stay inside and think about making some great fall harvest-type comfort foods! Hmm, there might have to be a grocery trip involved, though. Fortunately, my other half likes to go to the grocery store. It always takes him twice as long as it would take me, in part because he has to visit with about half the town, at the store, LOL.

I have a ham bone thawing, a roast thawing and I just put some brawts in the oven with green peppers and onions on them. The ham bone is going in the crock pot over night so I can get the broth and the roast is going in the oven tomorrow. For a person who hates to cook I try and get a lot done over the weekend and eat and nibble all week. Besides, everybody knows everything tastes better the next day. ;O) What makes it real easy for me is Bill is not a picky eater.

Our comfort food treat for today is a key lime cheesecake that's in the oven right now. Can't wait to taste it. It's the "piece de resistance" of the birthday dinner for my 17-year-old daughter today; that's what she requested.

I think I have to tweek it a bit, but when I get it right, I will definitely share it with you. It called for a 1/2 cup of fresh lime juice and I think that is too much extra liquid; it doesn't want to set up right. I'll work on it and then get you the recipe.

In my experience, the key to the very best key lime pie is to use authentic Nellie & Joe's Famous Key Lime Juice, generally sold in a 16 fl. oz. plastic bottle. According to the list of retailers shown on their web site, it should be available at Econo Foods (for you folks in the Copper Country). Better than squeezin' real key limes, not to mention easier!
The key lime pie recipe on the label allows for a generous whipped cream or meringue topping, or you may also double-up the recipe, which will fit perfectly in the crust without additional bake time.
The label also claims that Nellie & Joe's is good in any recipe that calls for fresh squeezed lime juice. Does that same rule apply to a key lime cheesecake, though?

I have used Nellie and Joe's in a pie before and just forgot about it when I was shopping for the cheesecake. I will look for it for the next one. I hope this one is edible. We'll see.

I used to have a good recipe for a key lime pie that was no bake. The acid in the juice cooked the pie and set it up.
