Even better; mix a few strawberries with that rhubarb in a nice pie crust and add a scoop of vanilla ice cream on top....... scrumptiously delicious!!

Yup, just finished the last of the strawberry rhubarb pie yesterday. It was delicious!

My mother used to make a "quick" rhubarb dessert. Not exactly sure of the recipe, but I think it was basically bisquick for the crust, strawberry jello, sugar, and the rhubarb. Quite tasty for something so simple to make!
