Well, the secret is to use a cup cake tin. You know either 6 or 12 spaces for cupcakes. I make my meatloaf recipe like I always do .. 1 pound ground beef, 1/3 of pork sausage, egg, saltine crakers, salt and pepper to taste. A small can of Hunts tomato sause with garlic and oregano herbs already in it, and mix well. I only use 4/5ths of the can of sause in the mix. When all is mixed well, I use my wooden spoon handle to make a deep well in the middle of the 'cupcake' meat and egg mixture and fill-up the void with the remaining tomato sause like it is a volcano. I top with a sprinkle of pepper and bake at 375º for 20 minutes. Watch carefully not to let the grease spill over the tin onto the oven while cooking, cause it will cook fast and smoke up the kitchen. Its a fast way to make dinner and it remains juicy and not dried out cause of the sause in the middle.
